Ristorante La Stua

In Cavalese, in the Sissi dining room in the La Stua restaurant, time seems to have stood still, amid a cosy atmosphere of wood panelling and Trentino majolica ceramics. This is Jngrid Vanzo’s restaurant, and she’s inherited the pride and passion of her parents, which she continues to honour in both her cuisine, and the spirit of the place itself. Reworkings of traditional Trentino recipes with fresh, locally sourced ingredients and an obsessive attention to detail. The wine list contains around 100 labels, all personally selected by the house sommelier.
Locanda degli Artisti

‘Toleve temp per magnèr ben, bon e ence bel’. This traditional saying from the Fassa Valley has its origins in the Locanda Degli Artisti in Canazei. ‘Eat well, deliciously, and also beautifully.’ This inn is a welcoming house, brimming with works of art and fine cuisine. Sculptures and original paintings on the walls, inspired recipes and creative dishes – in a contemporary atmosphere dedicated to those who enjoy something a bit out of the ordinary.
The Alla Corte dei Toldi Tavern

An ancient courtyard in Val di Sole, in the historic centre of Terzolas. An ambiance adorned with larch wood panelling and inset stones, where original takes on traditional cuisine are served up by the brothers Alessandro, a mathematician, and Andrea Daprà, an art expert. The medieval wine cellar boasts over 600 labels, including Vini dell’Angelo, obtained by recovering a native Trentino grape variety.

Set within an historic house in Levico, the atmosphere is warm and welcoming, typical of a local hostelry. Dishes are ‘good, wholesome, and healthy’. Locally sourced seasonal ingredients are transformed using water, fire and great patience. Cuisine is traditional, with family recipes handed down through generations, that are suddenly enlivened with an imaginative new twist, and voilà – a new dish is created.

In this mountain restaurant situated in the centre of Madonna di Campiglio, the Dom dining room boasts a special, intimate atmosphere clad in stone pinewood, and a terrace with heated tables for seating you beneath the stars. The kitchen offers traditional local seasonal cuisine from forest and alpine meadows, often reinterpreted, using skill and a certain dose of creative flair, to create an emotional feast, first for the eyes, and then the tastebuds.

No list would be complete without an enchanting lakeside location. In Torbole on Lake Garda, as per tradition, La Terrazza offers a landfare menu, and a menu showcasing lake fish. The recipes, along with the fish on offer, vary according to the season. Every dish is an overture of colours, making them a one-of-a-kind taste experience. Their whitefish carpaccio, chub meatballs, ‘bigoli torbolana’ pasta, and lake fish and truffles from Mount Baldo are all well worth sampling.
