Bernardino Poli, the owner of the distillery, works his vineyards and in the winter months transfers his activity to the small but efficient craft-made distillery where he creates fragrant single-variety grappas and several aromatic medicinal herb grappas using a steam-driven "bain-marie" batch distillation system.
The grape harvest is followed by the selection of the best and non-pressed grape pomaces that are then distilled slowly.
The result is an output of grappas featuring considerable aromatic components that diffuse into a smooth and round taste thanks to the skills of the master distiller, Bernardino Poli.
