In an old shift-operated dairy the instruments and techniques of Trentino's dairy traditions.
The Museum of Dairy Traditions in Rabbi is hosted in an old shift-operated "casel" (dairy) and exhibits all the instruments once used in the area to process milk. The exhibition illustrates how the dairy were supposed to work in bygone times in this land, and allows visitors to taste Trentino dairy products' excellence, which is mainly due to the high quality of raw material, of milk, but also to how healthily cattle is used to be fed, as it is bred on mountain pastures. The centuries-old processing techniques of the master cheese makers, who can still guarantee excellent organoleptic qualities in the butter, yogurt and cheeses they manufacture, are still scrupulously relied upon, though supported by up-to-date equipment too.
