Cardoncello Cimbro – Drakebris
The dragon mushroom of the Cimbrian Highlands: a rare delicacy that can be cultivated
A special invitation to discover one of the most fascinating and rare alpine mushrooms: the Cardoncello Cimbro (Pleurotus eryngii var. laserpitii), known in traditional Cimbrian language as Drakebris, the “dragon mushroom”.
Leading this journey of discovery is Damiano Zanocco, mycologist and forest ranger of Alpe Cimbra, supported by Isacco Corradi, as they present an innovative project for its appreciation and sustainable use.
This mushroom is unique: the only member of the eryngii group that grows naturally in alpine environments, while all others thrive in Mediterranean habitats. Found in just a few selected locations in the Cimbrian Highlands, it is clearly distinguishable due to a set of unique morphological features.
After years of research and experimentation, mycelium from wild specimens has been successfully isolated and tested for domestication and cultivation, even in home environments. The result? A promising opportunity for local, sustainable production, allowing people to enjoy this precious natural gift even outside its native habitat.
An opportunity to discover a new flavor of Alpe Cimbra, blending nature, tradition, and culinary innovation.
