It is no surprise that your welcome at the table comes from Innesti, in Pergine Valsugana, where Elisa and Daniele are ready to amaze the most demanding palates with a combination of local ingredients and exotic inspirations, such as the now famous Sushi di Montagna® (Mountain Sushi). It is the perfect place for a gourmet lunch or dinner, but also, on certain dates, for delicious brunches.

From here you can easily reach Castel Pergine via a trail of about half an hour through the woods. This destination is a charming place to visit; it offers different accommodation options, including old and modern rooms and suites in the towers, as well as a restaurant and the café bistro Locanda Ca’ Stalla, which features vegetarian dishes. And who knows, maybe within the walls of this suggestive manor, you will also meet the “white lady”, who, as legend has it, has been dwelling here for hundreds of years. But the area’s vegan dishes don’t stop there.

The historic Veg Point is hidden on the Tenna hill, between the two Blue Flag lakes of Caldonazzo and Levico. The first vegetarian restaurant of Trentino Alto Adige, managed by the amiable Franco, offers a journey through the flavours and colours of distant lands, in a relaxing and convivial atmosphere. Once you get here, it is worth taking the ten-minute walk to Forte di Tenna from where you can admire a spectacular panorama.

Lakes of Caldonazzo and Levico

Just outside the town of Caldonazzo is the Verdecrudo farmhouse of Alice and Paolo, who, with this project, bring together land and cuisine, guided by authenticity and respect for nature. The organic menu, which changes monthly, is inspired by seasonal products from the farm or other nearby farms, edible flowers and wild herbs, to be enjoyed together with the romantic view of the Valsugana.

And who could ever imagine that the wonderful waters of Lake Levico are not only the perfect place for a swim or a moment of relaxation but also for ageing Trentino sparkling wines? In fact, at a depth of twenty metres, Cantina Romanese lets its Spumante “Lagorai” Trentodoc Riserva rest for two years. It is worth a visit to enjoy this Spumante during tastings in the cellar organised by brothers Giorgio and Andrea.

To continue your journey through history, you can go as far as Forte delle Benne, two kilometres from the centre of Levico, which also offers the possibility of taking part in guided tours. And if after the walk in the woods you are hungry, our advice is to make a stop at Riccardo Bosco’s Osteria Boivin, which, according to the Slow Food Osterie d’Italia 2024 Guide, is one of the best in Italy. Here quality, passion, research and great hospitality come together, blending Trentino cuisine and fantasy, always in the name of “good, clean and fair”.

When exploring Valsugana, you certainly can’t miss a detour to the treasure chest of culture and nature of Arte Sella, but also a visit to Castel Ivano, in the town bearing the same name. Accompanied by your guide, you will discover ancient rooms, centuries-old plants, flower-filled courtyards and even a small consecrated church. And there is more… The visit can be enriched with a tour of Cantina Terre del Lagorai, which is located here, which includes a tasting of excellent still or sparkling Trentodoc wines.

And for a final dip in nature, we recommend a moment of relaxation at the Villa Agnedo Wildlife Oasis, one kilometre from the manor, where deer and roe deer are at home, ready to be admired in all their beauty.
