Giovanni Poli’s distillery is itself a distillation, encapsulating the heritage of entire generations of distillers in Trentino’s Santa Massenza, the symbolic home of grappa where the art of distillation is a centuries-old tradition. It was in the 1970s that Giovanni Poli, along with other distillers — innovating pioneers driven by love for their work — transformed the world of grappa. Originally considered to have little worth, inspiration and the pursuit of quality turned it into a truly excellent product that met with great acclaim and success. A careful selection of raw materials and the use and optimisation of a water-bath alembic still, designed by Trentino coppersmith Tullio Zadra, allow the natural fragrances and essences of Trentino Grappa and other spirits to be preserved.
