Vittorio Paolazzi, born in 1962, is a devoted follower of a tradition that dates back to another era, when Trentino was not yet part of Italy and grappa was measured using a “congial de ram” (copper ladle) bearing the imperial eagle of the Habsburg Empire. “The art of lambicar has always run in our family”, he says. One meaning of the verb lambicar is “to produce grappa”, i.e. to distil, but it can also mean “to lead a life of struggle and hardship”, depending on the context.
