Think you know mountain food? Think again. Trentino’s cuisine mixes culinary traditions from both north and south to mouthwatering effect, and serves up a never-ending diet of surprises. Here, to whet your appetite, are recipes for some of our most distinctive dishes.
No Trentino Christmas is complete without Zelten. The word originates probably from the German adverb “selten”, which means “rarely”.This should give you an idea of how special this rich fruitcake is. Every family has its own recipe, but the core mix of dried fruits, nuts, cinnamon and either grappa or rum is constant. This recipe comes courtesy of the Osteria Storica Morelli in the Valsugana.
Trentino loves Carnival, and its traditions are colourful and diverse – ranging from Hapsburg-themed parades in Madonna di Campiglio, to the burlesque plays of the Val di Fassa. Food is enormously important during the festivities – and these are some of our most distinctive Shrovetide dishes.
