Fresh Goat Cheese wrapped in Carne Salada (cured beef)

Receipt offered by the Trentino Wine and Flavours Route 

 

INGREDIENTS

Fresh Goat Cheese, 200 gr
Carne Salada (cured beef), 10 slices
Extra virgin olive oil  - Garda trentino DOP
Chives - parsley - vinegar - salt - black pepper - chilli powder

 


Take 200g fresh goat cheese and work it into a soft and smooth mixture, adding a sprinkling of chilli powder to taste.

Spread the mixture over 10 thin slices of carne salada, then roll the meat slices and tie them with a sprig of chive to keep their shape. Keep cool.

Blend 3 tablespoons of DOP Garda Trentino extra virgin olive oil with a tablespoon of aromatic Trentino vinegar, salt and pepper.

Garnish the rolls with chopped chives and parsley, drizzle over the prepared vinaigrette and serve immediately.


The dish goes well with a glass of Marzemino red wine.

 


THE PRODUCTS

CARNE SALADA
Carne salada is one of the great Trentino specialties. Originally from the Lake Garda area, it can be found throughout the Trentino today. The product is made by marinating meat for 20-25 days in a mixture containing sea salt, laurel leaves, black peppercorns, juniper berries, garlic and rosemary. It is served  either eaten cooked or as it is.

 


EXTRA VIRGIN OLIVE OIL FROM GARDA TRENTINO
The Olio Extravergine d'Oliva del Garda Trentino is made in the northern part of Lake Garda on the Trentino side. The olives used to make this oil come from ancient trees grown on the hills that surround Riva del Garda, Arco, Nago, Torbole, Tenno and Dro.  Its taste is delicately fruity and spicy, with a hay and almond aroma.

 

TRENTINO DOC MARZEMINO
A young, fruity red wine with a slightly bitter taste - achieves the peak of its perfection on the basaltic terrains of Vallagarina (Rovereto). This wine was so famous that it was mentioned by Mozart in his Don Giovanni ("versa il vino, eccellente Marzemino!")
