Canederli with “Nostrano” Cheese
Receipt offered by the Dolomites Cheese Route
Cut 400g of stale bread into cubes and place in a bowl. Beat 2 eggs with a pint of milk and pour the mixture over the bread.
Mix in 60g of “Nostrano” (Cher de Fascia or Formae Val di Fiemme or Primiero) chopped fresh parsley and a pinch of salt and leave the mixture to rest for an hour. Form balls from the mixture and coat in flour.
Cook in boiling salted water for 10 minutes, then drain and serve with melted butter and Trentingrana cheese.
