Apple Strudel with a spumante TrentoDOC sauce
Ingredients for 4 people:
For the puff pastry
250g white flour
10cl sparkling wine TrentoDOC
For the filling
8 golden delicious apples
Raisins, pine nuts, cinnamon, crumbled biscuits, a knob of butter
For the sauce
3 egg yolks
Prepare the puff pastry and spread it out in a rectangular shape on a floured surface. Prepare the apples by slightly cooking them in a pan with the butter, sugar, raisins and pine nuts. Place the apple mixture in the middle of the puff pastry , close the pastry around the mixture and seal it by brushing the pastry edges with a beaten egg. Place in the oven for 35/40 minutes at 150/180°C.
Serve warm with the sauce which is prepared by mixing all the ingredients in a bain-marie.
