A lot of tradition on the plate, skillfully interpreted with imagination and innovative spirit, starting from flowers and herbs and going on with wine, an important element in the kitchen, too. Some exclusive menus are thus created using local gastronomic specialities, with appetizers like typical cured meat and cheese, unique first courses like potato gnocchi with chicory and speck or dandelion-flavoured ravioli, and particularly fragrant and aromatic second courses like thyme fillet and wild boar in Teroldego sauce.
