The original combination of the Trentino gastronomic tradition and the culinary wisdom of Salento was born from the initiative of the two owners Sonja and Renzo. La Pajara, a term that identifies the typical stone houses of southern Puglia that are located between the countryside and the sea, is a welcoming and elegant place, offering dishes from both territories revisited in a modern and innovative way. The palette of fish based on scallops, smoked trout tartare, shrimp skewer, octopus salad and much more is accompanied by the smoked meat of Siror with fresh goat and homemade breadsticks with Primiero potatoes.
