For more than twentyyears, research into local products has led chef Alessandro Gilmozzi to be very respectful of waste management, making the kitchen of this restaurant truly sustainable. It is no coincidence that the restaurant is part of the Chic Respect project and all its dishes have a low environmental impact. The restaurant collaborates with agricultural companies and cooperatives, farmers, artisans and specialised butchers, so the menu may vary slightly depending on the availability of products.
