Founded in 1949, initially as a trattoria, the Da Elda restaurant offers a menu linked to the territory that is characterised by its ancient flavours but reworked with creativity and craftsmanship using top-quality local raw materials. The list of the latter, an expression of a philosophy of the short supply chain that prefers small organic productions, includes Dro DOP plum, Molino Pellegrini Yellow flour, Tap potatoes, sword pears and much more. Excellent accompaniments with wild herbs such as dandelion and nettle, mushrooms, wild asparagus, molasses (a type of wild spinach), hops and elderberry and bear radicchio.
