STUFFED PANDORO WITH MASCARPONE AND WILD BERRIES

Difficulty level: Easy

 

Preparation

The Pandoro filled with Mascarpone and wild berries is a slightly different way of tasting the Italian traditional Christmas dessert.

The mascarpone cream makes this Christmas cake fabulous!

 

Ingredients for 8 people:

1 Pandoro

3 egg yolks

120 g of sugar

200 g mascarpone

wild berries

powdered sugar

Rum (optional)

 

Start with the Pandoro, which has to be cut horizontally into four sections – they will ideally become star-shaped slices. Be careful not to break the points of the slices.

In a large bowl, whisk together the egg yolks with the sugar using a hand mixer, until soft peaks form when the whisk is removed.

Now add the mascarpone and whisk it in, this time at the lowest speed. If you like the idea, add a little rum.

Divide the mixture between the layers of Pandoro and carefully spread out to the edges.

Reconstruct the Pandoro in layers on a serving plate, add the wild berries and dust liberally with icing sugar and serve.
