Discover how cheese is made out of Alpine milk, try the flavour of a fresh curd, watch cows being milked or just listen to the bells of the cows that graze near the dairy hut. A route along the Lagorai mountain chain, in the most hidden corners of Trentino, from Val di Fiemme to Vanoi, passing through Valsugana. Your guides will be men and women who have chosen the dairy hut as a lifestyle, simple people who will make you discover amazing things and enjoy experiences far from your daily routine, but very close to your imagination and to the memory you cherish of true mountain life.

Predazzo, Ziano di Fiemme, Malga Sadole, Cavalese

We start from Val di Fiemme on the discovery of a very famous cheese: the Puzzone di Moena DOP, which in its dairy hut variety, produced only with milk from the summer pastures, is also a Slow Food praesidium. To view its production live, you can visit the Cheese factory in Predazzo and Moena (reservation required). Tasty ingredient for the famous dumplings, it is also used to make a delicious sauce for the pasta Felicetti, produced in Predazzo with the water coming from springs at high altitudes. To enjoy the mountain air, we reach Ziano di Fiemme and from here we climb (on foot or by car, about 6 km) up to Malga Sadole (1650 m). The friendly hospitality of Fabio and his family welcome us on our arrival, but also cows and goats whose milk is used to produce cheeses like the Caprino di Cavalese or the Formae Val di Fiemme, the star ingredients of several recipes to savour in the dairy hut, together with the indispensable fortaie (omelets). To favour our digestion, let's undertake a nice walk to Passo Sadole or to Pian delle Maddalene along the old mule track where flocks of sheep that come from the sea to our mountains can still be seen passing today.

Cavalese, Valfloriana, Malga Sass and Agritur Fior di Bosco

If you still have in mind (and mouth!) the taste of the Formae Val di Fiemme from the dairy hut, every Friday morning the Caseificio (cheese factory) Val di Fiemme in Cavalese opens its doors to a guided tour on a discovery of all the processing stages, from the arrival on-site of the milk to the seasoning of the cheese. From here, we descend towards Castello di Fiemme and, following the left bank of the torrent Avisio, we enter Valle di Cembra on our way to Casatta, then climb up to Malga Sass (reachable by car, 10 km). Every summer, about 35 "grigio alpina" breed cows (a Slow Food praesidium) graze around the hut led by young Daniel, a passionate and amusing 20 year-old. All the staff of the dairy hut is formed by youngsters, with Andrea in charge of the kitchen and Valeria of entertaining guests. Yes, because here you can even sleep overnight, in one of five cosy rooms, with the bells of the cows to wake you up in the morning! The milk produced every morning in the dairy hut is transported to the nearby Agritur Fior di Bosco and transformed into delicious raw-milk cheese (100% organic), like Casatt of Valfloriana or Nostrano d'Inverno.


Sightseeing opportunities in Malga Sass:

- Touring the dairy huts (dates TBA, from July to early September): Discover the world of bees and cheese: you can watch the farmers milk the cows, see how they produce cheese.

- Dinner-aperitif: on Fridays from 6 p.m., enjoy exclusive aperitifs with products from the dairy hut at 2000 m altitude. Reservation recommended.

- A tasting session high up in the mountains: tasting menu with overnight stay and breakfast for 60 Euro. Do not miss the opportunity of a culinary journey through a 5-course menu that will take you on the discovery of a new way to see and taste the local cuisine. Reservation required.

Valfloriana, Roncegno, Agritur Rincher

Are you ready to discover another Valley of Trentino? From Valfloriana, head back to Molina di Fiemme and continue towards Passo Manghen, one of the most famous Dolomite passes (also climbed by cyclists during the Giro d'Italia). Continue in the direction of Roncegno, but do not forget to make a stop in Carzano at Azienda Agricola Thomas Capra and at Spera, Azienda Agricola Maso Conca Verde to taste excellent fruit juices made from wild berries (the first) and apples (the second).
Once in Roncegno Terme, climb up towards Agritur Rincher, where Diego and his family are waiting for you. Grandfather Dario and grandmother Rosa will explain how they transform the milk of their cows into soft ricotta, tasty seasoned cheeses and delicious, fragrant caciotta with spices and aromas, while Diego will prepare you an excellent polenta made with the "Spin di Caldonazzo" maize variety of the Associazione Valorizzazione e Tutela della Valsugana, served with fresh cheese or stuffed, and the traditional meat dishes of Trentino. Do not forget to pair the dishes with a nice glass of local beer produced by Birrificio Lagorai!

Roncegno, tour of the dairy huts of Lagorai

After having said goodbye to the nice managers of Agritur Rincher, we can head to Malga Trenca, where the cows of the farm graze, go fishing at Lake Prese or take walks to scout for deer, squirrels, marmots and other animals. For those who have a strong passion for the mountain pastures and would like to taste the various dairy hut products, this is the right place. Near Malga Trenca are Malga Fravort and Malga Colo, for an enchanting tour of the dairy huts on the Lagorai mountains. We are in the place where the fun project "Adopt a cow" began: with the certificate of adoption, you can visit the dairy hut and choose from its dairy products.

Passo del Brocon

Having left the mountain pastures over Roncegno, we make our way down and once in Valsugana we take the road that from Tesino reaches Passo Brocon. This area too, is scattered with dairy huts. Malga Cavallara was recently renovated and in the new milk processing room the staff produces delicious cheeses that are reminiscent of the wonderful scents of mountain herbs.
The amazing variety of flowers in the area, in fact, has contributed to the fame of the nearby Trodo dei Fiori, a botanical trail that offers breath-taking views.

Having crossed Passo Brocon, we are now in Valle del Vanoi, "the green heart of Trentino". Here, the Ethnographic Trail of Vanoi unfolds, with several theme paths, one of which dedicated to the dairy huts. Among these, we suggest a very special one (reachable on some days even with the shuttle bus from Caoria): Malga Fossernica di Fuori. This is the treasure trove of the Botìro di Primiero di Malga, a butter produced from raw mountain pasture cream only in the summer months, and a Slow Food praesidium. If you arrive early in the morning, you will find Dimitri and Lily busy producing the botìro, and you will be swept away by their simplicity and the smile they always bestow on guests. For lunch, in about 40 minutes, we reach Malga Fossernica di dentro, where you can taste the famous Tosèla di Primiero (which you can also purchase, along with the botìro, at the Cheese factory of Primiero). To finish our tour, a worthwhile visit to the Vanoi Ecomuseum, in Canal San Bovo, which offers a lucky few the opportunity of sleeping in old mountain huts in Prà dei Tassi, for a truly unforgettable experience.


Initiatives at Malga Fossernica di Fuori:

- Andar per Malghe (Touring the dairy huts) (one Sunday in July and one Sunday in August): a day to experience the dairy hut with a live demonstration of the churning process, a typical lunch and hiking opportunities. Visitors also have the option of reaching the dairy hut with the shuttle bus from Caoria.
